I don't think I'd be fond of subtitles, especially since the first game doesn't have one.

Joking aside, the cleanest way to handle it would probably be:

FINAL FANTASY VII REMAKE

...

Also, if you compare the Remake logo to the original, you'll notice they enlarged the Meteor and tilted/shifted it, creating the perfect amount of room for a single number on the right side...

How much would a 1-month delay affect the next part anyway?

Next to none, especially with how close it is to release. It wouldn't take many resources away from future installments that it would actually cause a halt in production. They are most likely at the beginning phases of development in Part 2 before it goes full-time right now.
