This is a neat project and the modder is very straightforward about their method and its shortcomings. That said, there are over 25,000 lines of dialogue in Remake, so I expect this project to stall once it hits Chapter 3. Maybe they'll just shift to main scenario dialogue at that point.

She's supposed to be four years old in the OG and Remake. It was probably just an innocent oversight by the person who made the tag, picking a random date because they knew it wouldn't be visible during normal gameplay. Hence all the other typos
