I was looking to see if there was a piano version of the Boss Theme on youtube as I love the piano lead-in to that song. I didn't find one, but I found this:

He managed to get just about every instrument in there BUT piano. But still, the variety of instruments gets him surprisingly close to the actual sound of the track.
