Is there an official canon term? The FF Wiki notes that the people are referred to as 'Wutai.' I've seen 'Wutain,' 'Wutaian,' and 'Wutainese' in fan creations and discussions. Is there any canon basis for any of these terms?

Not as far as I know, but I never played through all of CC so maybe something was said there?

I like Wutain and Wutainese, Wutainian just sounds kind of clumsy to me, like 'hey German boy, go back to Germania!'

Oh and I think Lic is the first person I've seen to use 'Wuteng' which I really like.

Ok so according to wiki, people from Shanghai are referred to as Shanghainese, which is a bit of a mouthful. Wutainese actually sounds ok by comparison.

I read a fanfic once where Cloud and Zack ordered the equivalent of chinese takeout except it was called wutainese takeout lol

I think it sounds silly.
 
My head canon says
"Wuteng" for the people, as in, "I think the Wuteng are very handsome."
"Wuteng or Wutain" as an adjective, "Wutain food is my favourite."
"Wute" if you want to be offensive and racist. "Hey, slanty-eyed Wute bastard!"
The insult used in game for them is "Wutai flea". Actually not in game per se; I think it's used in "On the Way to a Smile: Case of Yuffie."
Not I think my head canon is always right or anything.
Kassi, this talk of a Rude fic intrigues me muchly.

The army is referred to in CC as Wusheng but I dunno if that applies to everyone. They are definitely not held in the same breath as the Five Saints and the Five Gods.

Celes -- I'd actually considered calling the cuisine that too. Weird how there's a 'Korean BBQ plate' in Wall Market but no Korea, but if I started analyzing all the words used that reference Earth-specific things, I'd lose my mind.

I call them Wutaian, Wutain and/or Wuteng sounds like Wu-Tang, and Wutainese is lol.
