To humans, being crystallized is like death; and, besides this case (XIII), it's not really told if a fal'Cie will release their human servants.
It's been described that crystal stasis is like sleep, but it also sounds a lot like astral travel ~ if you know what those who believe in that say about it. The person who is crystal sees and hears what is going on, but they are physically unable or very rarely able to interact.
To fal'Cie, it's normal! They are crystals! Well, their truest physical forms, if I understand it correctly. I guess I can see where it would be offensive to a fal'Cie for a l'Cie to mock or misrepresent crystallization (which is kind of the feeling I got from Galenth Dysley/Barthandelus/Orphan).
Well, when the fal'Cie needed him/her/them again, yes - they would be reawakened. What happened at the end of XIII - Either it's not known if a fal'Cie would release their human servants or it is a rare thing.
Heck, even humans releasing other humans from slavery was a less-than-often thing. I don't know if 'rare' is the right word.
Also, the eternal life was the l'Cie/crystallization part of the deal.

Aside from that, wasn't it hinted that L'Cie who've crystallized will eventually reawaken anyway to give them ~eternal life~ 'n shit?
