Definitely see Sephiroth listening to classical, especially Tchaikovsky. Rachmaninoff too, even Chopin's Raindrop Prelude (I feel like it would fit his pre-Nibelheim penchant for mood swings ). I could also see him being a big opera fan (I mean just look at OWA).
I could totally see Tifa as a smooth jazz person - and I don't mean elevator music, I mean melancholy but passionate improv piano that you listen to when it rains. Stone Eyes from the VotL album is the first example I can think of. Also some neo-classical - Ludovico Einaudi, Clint Mansell. And yes, Coldplay too.
Cid - yep, classic rock.
Yuffie I see listening to just about everything upbeat she can sing/dance/electric guitar to. Lykke Li, Ingrid Michaelson, Bohemian Rhapsody, random oldies music (Erasur, Peggy March, The Exciters).
Cloud - Some metal, some rock. Apocalyptica.
Aerith - Considering how much she loves people, I could see her into a lot of world music.
Barret - In addition to angsty-political rock/metal stuff, Covenant. We command the system, calling all receivers, we are noisy people, for a better living. (aka angsty-political electronic stuff).
Reeve - Electronic. Chill stuff, like liquid drum and bass or dubstep (the stuff you listen to when you smoke weed, not Skrillex's hit of the week).
Vincent - I don't think Vincent would listen to a lot of music. When he did, though - Die Moldau, or maybe Holst (Jupiter maybe?).
Red - He would pretend to listen to classical or jazz classics but really his room would be full of Sum 41 CDs.
