Is there a way to dismiss something without being mean? That is what I would like to do. I genuinely believe some theories involving time-travel are not substantiated.
Sort of. You can point out that it's unsubstantiated and why rather than putting it at "everybody needs to stop watching 'Endgame' so much"-style assessments.
But at that point you're no longer being dismissive anyway.

In a manner of speaking, that is what most folks referring to time travel are saying. At least those saying it here, I think. I can't speak for anywhere else, as I haven't much looked anywhere else.
What I'm suggesting has traveled through time is knowledge/memories, and that it has done so via mechanics of the Lifestream. So, in that sense, yes, Sephiroth has only gained his awareness of the future from becoming a traveler of the Lifestream. Similarly, Aerith has gained her (more limited than Sephiroth's) insight through her communion with the planet.

I would suggest that it very much honors the original by leaving it in another universe, safe from being affected by any of this. Leaving it the hell alone is probably the greatest possible dignity it could be paid by a remake. =P
