Would she quietly accept it. Not exactly. She'd vent, let Cloud know her feelings, I think, maybe it'd take awhile, but she wouldn't do much more than that, and would probably be very supportive of them, same as I figure Aerith would when Cloud and Tifa hooked up had she lived. She obviously does when she's dead, but I expect she'd do the same alive, too.
I just seem to remember her stomping her foot a lot in FFVII... wasn't there something like

Tifa: *stomps foot* you didn't even ask if I was okay.
Actually, that's what Aerith does when you say "We gotta help Tifa!" and don't ask her how she is.
Tifa says something like "stop worrying about me lets go find Aerith" and you actually loose affection points for asking how she is. If you say "We gotta help Aeris!" Tifa says something like "yeah let's go find Aerith".
If Tifa is chosen as the Don's date:
"You all right?" (+3 Aeris)
"We gotta help Tifa!" (-2 Aeris)
If Aeris is chosen as the Don's date:
"You all right?" (-2 Tifa)
"We've gotta help Aeris!!" (+3 Tifa)

Just going back to the discussion about what Tifa would do if Cloud chose non-zombie Aerith...
The part where Tifa says EXCUSE ME actually goes something like this:
(Aeris is in a cell and can't see Tifa and Cloud in the next cell.)
Aeris: I knew that Cloud would come for me.
Cloud: Hey, I'm your bodyguard, right?
Aeris: The deal was for one date, right?
Tifa: (Sits up) ... Oh, I get it.
Aeris: ... !? Tifa! Tifa, you're there too!
Tifa: EXCUSE me. (She stands up.) You know, Aeris, I have a question.
Aeris: What?
Tifa: Does the Promised Land really exist?
I'm aware that the bit where she says "EXCUSE me" is the bit in the Ultimania shown with the caption "Seeing Cloud and Aerith developing their world together before her eyes, she inadvertently lets slip her peevish feelings." But doesn't it seem like Tifa goes "EXCUSE me" mostly as a response to Aerith's (somewhat rude) reaction to her presence? Not only to Aerith hitting on Cloud. She also proceeds to change the subject right away - possibly because she doesn't want any awkwardness to linger in the air, or because she really is concerned with the more important matters at hand. At any rate, she's not sulking or throwing a tantrum at Cloud. Oh, and she doesn't stamp her foot there, if I remember right.
I actually believe Tifa wouldn't have even said much if Cloud chose Aerith. There isn't just much to support that she would in the game; even her "Oh, I get it" is still much milder than it could've been. (Anyone knows what she actually said in the original Japanese version?) She never appears to think of Cloud as her property.
Besides, there is a difference between seeing a girl hit on the romantically-unattached man you like, and the man you like being in a solid relationship with another woman. What Tifa displayed peevish feelings to was the former; I doubt she'd be crass enough to object violently (if at all) to the latter.
On the other hand, while I'd like to believe that Aeris would let Cloud/Tifa be, I'm not entirely sure she would (at least not for a while). Why? "In-game proof": She continues to hit on/cling to Cloud, even when he clearly states that Tifa is his girlfriend. There's more, but I think that's already bad enough.

Aerith's just a 'go get what you want' kind of girl, which is fine, but like you said Powerslave, I doubt she'd of stepped aside when she saw more developing between Cloud and Tifa.

If you take me lightly, you're gonna pay for it!" (-2 affection points). If you talk about rescuing Aerith, she says "Hey, don't you even care about how I am? ... Never mind - let's go!" (+3 affection points)
Funny though, that you should get +3 affection points when Tifa appears slightly upset that Cloud didn't ask her how she was. It seems to indicate:
1. Tifa would MUCH rather be appreciated for her ability to protect herself than to be uselessly mollycoddled (but then why would she ask Cloud whether he cared about what happened to her in the first place?)
2. Like Raquelborn said, Tifa was happy that Cloud was more concerned for someone who was probably in danger, even if it meant neglecting to ask her how she was doing (when she was obviously fine).
3. A mixture of both 1 and 2.
By the way, I found this page, which contains some half-explored and rather subjective Clerith and anti-Cloti "facts" - perhaps many of you have already seen it... I call them half-explored, because they're discussed only to the extent where they are favorable for Clerith. Still, it's a rather amusing read.

When I saw the affection points walkthrough thingy, the first that came to mind was #2. I always saw Tifa as the selfless one, who constantly worries about others. There were a lot of instances where she showed more worry for Aerith than Cloud did (AERTI PROOFZ AMIRITE).
Now that I think about it, #1 does seem plausible. Tifa is a strong woman, and she knows it. Although that kind of reminded me of Aerith, who sort of prides herself on being independent (it's the spunk!). I remember this KH scene where Leon told her to hide or something because it was dangerous, and she just looked at him expressionlessly, giving off this vibe that he just insulted her or something. I always liked that scene. Aerith is so awesome.
In that scene where Zack fell in the church, he had this short dream where he was talking to his mother. And then, after a while, his mother's voice overlapped with Aerith's 「もしもし?」 (hello?). He then addressed/mistook Aerith as his mother.
And we all know Cloud did this in AC/C, where he called Aerith as "mother". Now, we can't possibly say that Aerith is motherly to both. The parallel was made to show how Aerith is a mother to Zack, and koibito to Cloud.

Aerith comes across as independent and likes to think of herself as so but she isn't tough like Tifa. Hence why Tifa gets to fight off a load of heartless and take on Sephiroth in KH2 but Aerith tends to just cheer from the sidelines.
I think the difference is that Aerith needs to be protected but doesn't like to be (although she likes the idea of people being willing to protect her), whereas Tifa can look after herself but would actually like to be rescued once in a while.
I've met Clerith who find both sites to be an embarassment..
