So they apparently confirm here the Sector 6 plate collapsed. It was not left unfinished. Soooo... What made it collapse?
Well you see, there was this anti shinra group called... uh, rock slide that was based in sector 6. After a series of compelling story beats and emotional moments (did you know the merc they hired was actually Genisis' brother?) Shinra had Rude drop the sector 6 plate on them, killing them all.

I second Theozilla's sentiment. When the camera is panning around Cloud by night in the documentary footage, we can see a still intact plate support pillar holding up the sector 6 plate. Only the outer half seems to have broken off.
Now I'm wondering where exactly Wall Market is located (haven't checked that yet). It's still ways off from the center but not as far out to be underneath the hole above. Maybe they rebuilt the support pillar already?

A good bullet point list and link to the new Interview.

Also, if you wanna avoid spoilers. Skip past this point in the Red XIII section to the next question:

"However, the development team feel the same way that the fans do when it comes to seeing Red XIII as an important character, and we designed his gameplay in a special way to offset him not being playable in battle."

He didn't have it so much in the original design as in AC and Last Order. He had a pointy chin in the OG, BC, and CC, so It's been really inconsistent, and one's mileage may vary. I personally prefer the strong jaw since it makes him look his age.

This docu-series is incredible. It's so fascinating to see the level of depth they went into in making this game. It's also fascinating to see what it is they focused on.

The best part of this series isn't so much what they're saying they did. This is of course important, and objectively speaking, will be portrayed in this most positive light seeing as how this is their own project they worked on and are selling.

But what's truly interesting is what they're focusing on to talk about in terms of their efforts. That's what is so good and telling about the quality. The fact they are so heavily focused on how they construct the game not just in terms of its high-end graphics, but also in conveying the attitudes, emotions and story in a way that communicates the intricacies of the personalities of the characters is just. Their focus and efforts are in the right place. They are not merely polishing rocks. The focus and craftsmanship has been placed in areas that are highly important and reflective of them trying to tell a very meaningful and well-told story. And they're aware of what fans are looking for.

Like, Nojima's awareness of how important it would be to re-write the dialogue to adapt to a medium that has facial expressions, vocal dialogue, etc is great. Toriyama wanting to convey the mind-frame of each character in ways that were not capable in the OG is great. I'm just. Glad they're taking the potential of the game seriously.

Because what some of the issues of the Compilation's previous games were. Not that it was bad per se, but for some characters, the script-writing didn't properly fit or sound like normal conversational speech. Back in that era, a lot of games had that issue. XII didn't. XIII didn't. But KH, DC, and CC all to varying degrees had scripting-dialogue quirks that certainly sounded.. Not quite as natural. Your mileage may vary. However, as it's been shown thus far, VII-R's dialogue has been at a much higher level. A level fitting for a full budget FF title.

Nojima seems like such a sweet person. He is so aware of the feelings the original fans have, and it pains me to know these same feelings will blind them to at a point they won't experience what he is trying to do simply because it is "different" than the original.

His description of Cloud is just borderline perfect. The desire to be accepted, his cool facade. Those are all extremely personal and intimate characteristics, and it pleases me greatly to know they will go to such lengths. I was also so happy when they talked about the black screens, because holy hell, that was something I have been thinking about ever since the first footage of the Reactor 1 Bombing appeared. I knew it was such a difficult thing to pass onto a voice acted game, and they freaking knew about that too. Jesus, this game is right on so many levels....I'm really starting to think this will be the right to all wrongs. I just hope I'm atleast 50% correct.

In addition to what everyone else said, I really liked when he specifically mentioned the scene with Tifa and Cloud living in the same apartment building. I mean, this is a massive AAA game with dynamic action sequences and robust combat used to tell a powerful story of environmental destruction and economic inequality, and in all of that the main writer is excited about the most plain and relatable scene in the thing. I love it. When they said they were expanding Midgar, this is exactly the kind of scene I wanted to see, and I love that Nojima called out a scene like that specifically.

It's a nice scene, yeah. I just hope that Tifa's not the only one Cloud gets scenes like that with. I hope he gets some moments like that with Jessie, too. Obviously not exactly the same, but a similar plain and relatable feel and a bit of bonding. I know that, per Nomura's interview,
we'll get to meet her parents and have dinner, but the way Nomura worded it didn't indicate whether it was just Cloud who goes or if it's the whole group. Hopefully it's just Cloud, though. I don't think Jessie would spring a whole group of strangers on her parents like that. But bringing home a cute guy for the evening to meet her family, that's different.

I'm loving this series too.

In particular in this episode I like how they've talked about the "inner-mind" scenes where you just had text on a black screen. Obviously they've not given the game away but I'm sure we've seen the one flashback sequence (the one not in the demo) already which this seems to refer to. In the OG it was always a bit unclear/ambiguous what was going on here so to be able to see it play out is something I’m really looking forward to.

The fucking twinkle in Nojima's eyes is all I ever needed to see to know how much effort and care must have been poured into this thing.

Completely agree. They obviously care a lot and are handling it with extreme caution so they don’t get it wrong. It’s not inhibiting them to take some bold calls with expanding the story, but what is clear is that we’re going to get a lot of treats when we see the OG sequences reproduced.

Kudos to @Vyzzuvazzadth for getting the specifics of that scene right - again !

They're in the same building, but not the same actual apartment, I don't think. And there are probably other people who live in the building as well. Still, a nice character moment for them.
