Cloud is the ideal protagonist for FFVII, exactly because he fits with the "defying expectations" the OG had set up for itself. Up until that point, the Final Fantasy series were mostly medieval fantasy, sometimes with steampunk elements. VII was the first time this game abandoned kings, queens...

I always thought that Tifa nursed him back to health (or, some resemblance of health, considering his mental state) and once Cloud was able to function again, she convinced Barret to take him for the job. I mean, it'd make sense why she wants to keep an eye on him; she'd know he's not well.

They referred to Cloud as a former member of an elite force called SOLDIER. We know it's a lie. They keep stuff under wraps. Even if it's stuff in the original game but not well-known to the general public.
