Well in any case, both spellings lead me to conclude this is "Varva", or a high chance of it.
テクニック is technique usually you are correct and in this case it is: テクニカ
Perhaps they were getting at Technique because they were limited to 4 characters or maybe it is as you say, a fancy name like Technika... it could also be a foreign word for technique. Italian is Tecnica and German is Technik.
On that shanghai thing, it could be either, since the "shanghai" title is at the bar area/food area rather than at the Inn section....I will relook at this. But given the Chinese here it seems more likely "inn"

edit: just for fun cause I am obsessive, I have calculated the likely number of Chocobo names possible in the Japanese game to be:
(11*11) + (11*10) + (12*11) +1 (dongfang bubai) = 364
Around or exactly that number. The names appear to always add up to 6 characters.
