Another thing I like about Jessie is that she's one of the rare redheads in the FF scene. Most FF girls (from 7 onward, anyway) are your typical blond or brunette. Same thing over and over - Tifa, Aerith, Quistis, Selphie, Ellone, Rinoa (though she leans more toward black, which does make her stand out a bit more), Garnet, Yuna, Rikku, Ashe, Penelo, and Lunafreya, among others. Jessie's a nice and refreshing change from all that. There's brown in her hair, sure, but it's lighter than most other girls' and it has a slight red tint to it that's seen more readily in some places than others depending on the lighting. But it's there, and it's a nice touch.
