I can deal with people like that sometimes but not all the time. And this particular person was a work colleague I worked with every single day in a very social setting and I was always polite and not on bad terms or anything - but heck it was draining. Like massively. And some of the behaviour was borderline inappropriate with how immature and touchy-feely it was. I know none of my male colleagues liked her.

Again I’m going to reiterate my firm belief that all the gold saucer dates will have canonically taken place in the story. Far too much of the key important character development moments take place on the Skywheel with ALL the characters.
Optional or not, there’s no way the developers will have done those scenes for all the characters just as an act of fan service. Key plot points are discussed and confirmed, key character moments reach their natural conclusion having been built up through the game. And this is for everyone, not just Aerith. To write off Tifa’s date as optional fan service is to write off all the others as well by that same argument. That’s my biggest issue frankly, that everyone else doesn’t matter in the story they see, because the story of Final Fantasy VII is ONLY Cloud and Aerith to them, at the expense of literally everything else.
If a scene contradicts their ship, it isn’t canon. Or they’ll misinterpret it to suit their conclusions. But if a single ever so slight implication takes place in any such scene, like Claudia’s saying to Cloud about finding a mature girl, then it goes in the evidence folder.
More to the point with the other gold saucer dates, each and every single one displays Cloud’s character growth. Not just Aerith’s. It’s not a one and done thing, so I’m positive all of them will have an impact for the characters going forward into part 3.

Okay so I've just watched the end credits. It shows the
almost kiss with Tifa in Gongaga and Cloud putting his arm around Tifa in Nibelheim. At both bits showcasing the Gold Saucer dates (the one where SW is closed and the one it's opened) and it shows no canon date. It does show Aerith as Rosa - which makes sense because she's Rosa on all dates bar Yuffie and Tifas. But no Skywheel dates at all.

What I can't wrap my head around is the fact that something is suddenly "canon" because it is in the end credits. I am being quite frank here when I ask, how would one come to that conclusion?

I like Naruto and Hinata's dynamic, personally. But I do get the biggest problem with them is Hinata's woeful lack of screentime (and the author just being terrible with writing his female characters more than half the time). Hinata is also not all that fleshed out as a character despite having a lot there to work with.
I think that deep down, they know that's all they have.
I can't think of any logical reason to use the credits, of all things, as proof of canon.

The people who came to this conclusion did so because it fits their narrative. Had the shoe been on the other foot they would be deriding anyone seriously suggesting an end credits highlight reel, showing various clips from the game, is actually the devs secretly showing what is canon and what isn't.
The thing is, Aerith dies, Cloud ends up with Tifa, the Lifestream/Highwind scenes are coming in part 3, they already go way further at this stage of the story than in OG. Trying to argue the Gold Saucer CT kiss is non-canon doesn't change a thing. It's just another tired attempt at delegitimising the characters of Cloud and Tifa (and in the process, Aerith herself) and the relationship which is central to both.
On that note, have y'all ever noticed how Cleriths spend their entire time jumping through hoops to try and show Cloud doesn't love Tifa? It's by design. Before they can even start to prove CA, they have to disprove CT - while Clotis just sit back and enjoy the story, knowing it speaks for itself.

I've headcanon'd quite a few ships but I definitely won't bend over backwards through so many mental hoops to say they're canon when canon itself says or implies otherwise. FF.net (back then -- god that made me feel old) and AO3 are here for my headcanon needs.

Yeah me too. And saaaame re ff.net haha that was my introduction to fanfiction at 13 when I stumbled across it googling crap like 'do other people think Naruto and Sasuke secretly love each other.'
I read it on Ao3 too now and heck, they have some excellent ones. Especially for SasuNaru. But yeah for all my headcanons there are always great fics and great fanart too! Shipping is meant to be fun!!

3. What exactly is Cloud pitying?
